The Executive Sous Chef plays a pivotal role in the culinary team.This position involves supervising kitchen staffs, ensuring the highest standards of food quality, and contributing to menu innovation and development. The ideal candidate must demonstrate extensive knowledge in buffet breakdown costing, recipe and card costing, and the ability to design international menus including Thai, Indian, and Fijian dishes.

Responsibilities:

  • Collaborate with the team to manage daily kitchen operations.
  • Innovate and design exquisite international menus, including Thai, Indian, and Fijian cuisines.
  • Conduct detailed buffet breakdown costing, recipe costing, and card costing.
  • Supervise and mentor kitchen staff, ensuring a high standard of culinary excellence.
  • Maintain a clean, safe, and organized kitchen, adhering to health and safety regulations.
  • Assist in menu planning, special events, and seasonal offerings.
  • Monitor inventory and order supplies to ensure the kitchen is well-stocked.

Qualifications & Experience:

  • Proven experience of at least 3 years as a Sous Chef or similar role in a high-end culinary environment.
  • Expertise in Thai, Indian, and Fijian cuisine.
  • Proficiency in buffet breakdown costing, recipe costing, and card costing.
  • Strong leadership, organizational, and multitasking skills.
  • Commitment to maintaining high standards of food quality and presentation.
  • Culinary degree or equivalent experience preferred.
