Malamala Beach Club is an awarding winning and truly unique offering within Fiji’s tourism industry. Located just 25 minutes from Port Denarau, Malamala Beach Club is the world’s first and only island beach club. Offering private cabanas, poolside day beds, an infinity pool, a dedicated adults only venue, curated cocktails and a popular all-day a la carte menu.

We are currently seeking interested and qualified applicants for the position of Head Chef. The successful applicant will be an experienced Chef who is focused on delivering a world class food experience to all those who visit Malamala Beach Club. The Head Chef is tasked with maintaining a vibrant Pacific inspired all day a la carte menu whilst also being able to cater for large groups, conferences, events and weddings through our expansive banquet offerings including gourmet buffets and live cooking stations.

Ideally the Head Chef at Malamala Beach Club will have a proven track record in the hospitality industry, be innovative, professional, open minded and have a love of local ingredients. The successful applicant must be able to provide and demonstrate efficient, professional and customer focused levels of service ensuring the same high standards are achieved and instilled within the kitchen team. The management of food costs and stock control is vital.

Reporting directly to the General Manager – Malamala Beach Club and to the Corporate Executive Chef, this is an opportunity for someone with the necessary experience who demonstrates the enthusiasm and skills required to take their career to the next level with one of Fiji’s tourism leaders.

Key Responsibilities:

  • Ensure Malamala Beach Club continues to exceed customers’ expectations through the delivery of an innovative Pacific inspired menu in a busy all-day kitchen.
  • Be able to direct and oversee all daily operations including the preparation and production of all menu items to a high standard and high level of presentation.
  • Able to demonstrate a high level of kitchen safety and hygiene standards. 
  • Be able to oversee budget and forecasting, system management ordering and cost control.
  • Be able to provide ongoing training and development to the wider kitchen team.

Required Qualifications and Skills:

  • 3 to 5 years of experience in a similar level or position
  • Be able to demonstrate a strong desire and have the necessary skills to progress your career to the next level.
  • A reasonable comprehension of IT programs including word, excel and outlook.
  • Be comfortable interacting with customers and able to provide demonstrations from time to time.
