Radisson Blu Resort Fiji is seeking to employ energetic and self-motivated individuals to the following role in this prestigious 5-star resort located on Denarau Island, Fiji. We create 100%

SOUS CHEF
Key Areas of Responsibilities:
Develops menu options based on seasonal changes and customer demand.
Assist with the preparation and planning of meal designs and ensuring that kitchen activities operate in a timely manner.
Attend to guest complaints and resolve problems in a timely manner.
Monitor and record inventory, and if necessary, order new supplies.
Provide support to junior kitchen employees with various tasks including line cooking, food preparation, and dish plating.
Recruit and train new kitchen employees to meet restaurant and kitchen standards.
Preparing and presenting menu items, showing variety and flair, whilst simultaneously achieving budget requirements.
Leading, developing and managing Junior Chefs in the Kitchen Brigade.
Supporting the Executive Chef to lead the Kitchen operations.
Adhere to and implement sanitation and safety regulations.
Perform other duties when assigned.
Requirements:
Experience in a five-star hotel kitchen environment.
Previous experience in similar role is essential.
Trade qualifications in in Culinary Arts or equivalent.
Excellent technical knowledge with experience in all cooking techniques and styles.
Experience in leading and supervising chefs at a more junior level.
Immaculate presentation and grooming standards.
Flexibility to work across a 24/7 roster.
Excellent time management skills & ability to multi-task in a busy environment.
Ability to work independently and with a team in a fast-paced and high-volume environment with an emphasis on accuracy and timeliness.
Good time management skills; ability to prioritize and coordinate details.
Must be proficient in windows and Microsoft office suite, especially Excel.
